Homemade applepie

What a lucky moment of smalle happiness when you smell the scent of homemade apple pie at your house. I find it a perfect fragrance at this time of year . With one foot still in the summer and your other in the autumn there is more space for domestic moments. Baking together with your kids and then enjoying the scent of homemade applepie already looking forward to a nice piece. It fits perfectly with the theme of this week , enjoy the little tings in life . When it finally is ready get together at the kitchen table enjoying a warm piece with whipped cream to treat yourself a bit. Pure pleasure and instant quality time with your family. ingredients : applepie
50g raisins
50g currants
4 apples ( granny smith )
2 ½ tsp cinnamon
200 grams of sugar
2 tablespoon lemon juice
150g gluten free flour
150g gluten free self raising flour
1 vanilla sugar
1 ½ teaspoon salt
250 grams butter
1 egg
1 tablespoon water

Will need: round springform pan of 24 cm

preparation :
Wash the raisins in a sieve and drain. Peel the apples , remove cores and cut into cubes . Put in a bowl : raisins , cinnamon , 1 tablespoon sugar and lemon juice . Stir everything together.

Take a tin of 24 cm and grease it . Preheat the oven to 200 degrees . In a separate bowl do, combine flour , self-raising flour , 180 grams of sugar , vanilla sugar , salt and butter. With 2 knives cut butter into the flour until pea size . Split one egg and put the yolk in the dough. With a cool hand quickly knead into a cohesive dough . Express ¾ of the dough into the shape with edge of about 2 cm. Then add the apple mixture on top.
Dust a sink or siliconemat with a little flour and roll out the rest of the dough with a rolling pin  and cut into strips or simply ball and roll it by hand as much as possible into thin sausages and place in squares over the filling. Protein rapping with 1 tablespoon water. This cover the top of the dough with a brush . Bake the pie in the middle of the oven for about 1 hour until golden brown.
