Glutenfree High Tea

Happiness and relaxation does not always have to be complicated and to take place outdoors. You can also organize a something special in your own home. So we decided with our family to do so at home. A mini high tea party just to celebrate that everyone can be together. No complicated recipes but tasty and easy to prepare yourselves , shop groceries together and start preparing together with your children. The sandwiches you make of sandwich bread , cut the crusts off and smear it with herb cheese , put on smoked salmon and cucumber slices , top with a second slice of bread and cut in half diagonally . Make the scones with this recipe and use gluten-free self raising flour. Also make the blueberry muffins recipe with gluten-free flour. We used our grandmothers tableware to create a nostalgic atmosphere in memory of her and so recall memories about former family festivities. Put various teas on a dish so that everyone can taste different flavors. You can easily expand the high tea with lunch snacks if you want to surprise larger groups of people. Enjoy the moment !

Homemade applepie

What a lucky moment of smalle happiness when you smell the scent of homemade apple pie at your house. I find it a perfect fragrance at this time of year . With one foot still in the summer and your other in the autumn there is more space for domestic moments. Baking together with your kids and then enjoying the scent of homemade applepie already looking forward to a nice piece. It fits perfectly with the theme of this week , enjoy the little tings in life . When it finally is ready get together at the kitchen table enjoying a warm piece with whipped cream to treat yourself a bit. Pure pleasure and instant quality time with your family. Start baking and enjoy , pure mindfulness !

ingredients : applepie
50g raisins
50g currants
4 apples ( granny smith )
2 ½ tsp cinnamon
200 grams of sugar
2 tablespoon lemon juice
150g gluten free flour
150g gluten free self raising flour
1 vanilla sugar
1 ½ teaspoon salt
250 grams butter
1 egg
1 tablespoon water

Preparation time: 30 minutes
Preparation time: about 1 hour
Will need: round springform pan of 24 cm

preparation :
Wash the raisins in a sieve and drain. Peel the apples , remove cores and cut into cubes . Put in a bowl : raisins , cinnamon , 1 tablespoon sugar and lemon juice . Stir everything together.

Take a tin of 24 cm and grease it . Preheat the oven to 200 degrees . In a separate bowl do, combine flour , self-raising flour , 180 grams of sugar , vanilla sugar , salt and butter. With 2 knives cut butter into the flour until pea size . Split one egg and put the yolk in the dough. With a cool hand quickly knead into a cohesive dough . Express ¾ of the dough into the shape with edge of about 2 cm. Then add the apple mixture on top.
Dust a sink or siliconemat with a little flour and roll out the rest of the dough with a rolling pin  and cut into strips or simply ball and roll it by hand as much as possible into thin sausages and place in squares over the filling. Protein rapping with 1 tablespoon water. This cover the top of the dough with a brush . Bake the pie in the middle of the oven for about 1 hour until golden brown.

Antipasti buffet

CIABATTA POMODORI and CIABATTA OLIVE
Very important for a successful Italian antipasti buffet is good, fresh bread. Get it at a good bakery or bake it yourself. I have a great bakery nearby so there I always buy pomodori ciabatta and olive ciabatta. They sell it by weight, it allows you to see for yourself how much you need. Cut into cubes and serve with an olive oil dip with sea salt.

TOMATO MOZZARELLA SKEWERS 20 mini tomatoes 20 mozzarella piccolo 20 basil leaves 20 sticks about 20 basil leaves, dash of extra virgin olive oil, garlic clove and a mortar for the fresh pesto. Cut the tomatoes in half and poke one half with the back first on a skewer, over half a basil leaf, a mozzarella piccolo, another half basil leaf and finally another half tomato with the flat side first. Repeat this as much as you need. Finally, create a fresh pesto by pouring a little olive oil into the mortar and rub a clove of garlic through it using a fork. Keep adding basil leaves and rub with the mortar around until all the leaves are jacked to a paste.

PARMAHAM ROLLS per person 1 slice of Parma ham 2 tsp sour cream 1 teaspoon pesto 3 rocket leaves lettuce. These are the supplies per roll, you can decide how much you want to make. Mix the crème fraîche with the pesto, spread on a slice Parma ham and put on top three leaves arugula. Then roll up and place in a bowl.

APRICOT WITH RICOTTA AND ALMONDS (for 24 pieces): -12 ripe apricots 24peeled almonds 200-250 g fresh ricotta or fresh cream cheese pinch of cinnamon 30-40 gr caster sugar. Cut the apricots in half and remove seeds. Chop 12 almonds coarsely. Beat the ricotta loose with the cinnamon and sugar and stir in the chopped almonds. Fill  the half apricots with this mixture and garnish with almonds.

SUN-DRIED TOMATOES
I prefer to do this yourself. You can choose the best for medium vine tomatoes. It can also be cherry tomatoes. – About 20 cherry tomatoes – 3 cloves garlic – olive oil 4/5 spoons – 3 spoons dried oregano. Cut the tomatoes into quarters (halves with cherry tomatoes), put a piece of aluminum foil on a baking sheet and brush it with a lot of olive oil. Cut the garlic cloves through, puncture on a fork and lubricate the oil, then let it lie. Divide the tomato pieces on the baking sheet, pour olive oil over it and finally put the oregano on top. Put at least 2 hours in the oven at 150 degrees.

OLIVE FRITTE 2 tablespoons grated Parmesan cheese 16 large pitted olives 60 grams flour, 40 grams breadcrumbs oil nutmeg, salt and pepper 60 ounces of chicken breast (or leftover of any other kind of meat) 50 grams baconquarter liter of dry white wine 1 slice fresh white bread without crust 1 egg and 1 egg yolk. Cut the meat into very small pieces. Fry the bacon until golden brown and add the meat, salt and pepper. Extinguish it with wine and let simmer for an hour. Chop the roasted meat very finely. Soak the bread in wine and squeeze it out. Mix the bread with the egg yolk, Parmesan cheese and nutmeg and knead the meat. Fill the olives with this mixture. Beat the egg with salt loose and role the olives through it, then roll them in the flour and breadcrumbs and deep fry in hot oil.

ADDITIONS
Buy from a good (Turkish) greengrocer fresh marinated olives. I always go for a big green garlic / herb marinade. Furthermore I buy sweet peppadews with it. Artichoke and anchovy also always do well at a antipasti, they are in a jar ready for sale.

BBQ party

You can always think of a reason to party, celebrate life because the sun is shining or to hold the holiday feeling or whatever reason.
Whether you‘re with a large group of people or with a few close friends, a barbecue always does well. You can plan a complete and original party by the rise of the so-called outdoor kitchens in recent years. But also with an ordinary charcoal barbecue  you’ll succeed because the preparation can take place
in your kitchen. For us, barbecuing no longer is a matter of 3 or 4 pieces of meat with sauce and bread. For years, we try not to fall into the same thing, you can make the course as crazy as you want to. What really is important in any case, is making the salads fresh and homemade. And believe me there is nothing simpler than that, even vegetarians get a nice bbq party out of it .

Life is a picnic, spontaneous picnic for 2

This morning we had the spontaneous idea to have a picnic on my day off. Taking the bike, riding somewhere, lying in the grass lazy and enjoying some delicious snacks. I immediately opted for the quote of the week ‘Life is a picnic’. Because it was a spontaneous impulse, we kept the snacks simple to go on the road within half an hour. We have chosen to make an organic rucola salad with rucola out of our own mini garden mixed with bacon, pineapple (we cut the pineapple at the picnic spot but that proved more difficult than expected, so already doing this at home is a tip) and a little bit dressing with mustard and honey. Pin small mozzarella balls with cherry tomatoes and a basil leaf on a skewer and make a few wraps with herb cheese, rucola and slices of smoked salmon. We had readymade chicken skewers, which you can also make yourself if you have more time. Quickly make a tuna salad (can of tuna with chopped pickles, mayonnaise and ketchup) on some toast and also dip strawberries in melted chocolate. Then make in the blender a healthy shake of strawberries and a mild yogurt and pour it in nice bottles for a festive effect. For a successful picnic there is beside a healthy drink of course a nice rose wine, I would recommend Plage du Sud ‘. This is a southern French rosé from near the Provence, a fresh and soft wine with fruit flavors of peach and raspberry. Finally a cute plaid and a few pillows in a nice bag and the trip can begin. Be inspired by the pictures and enjoy your own picnic in the field, in the park or your own backyard ….
